Rhubarb Cake Recipes

Fabulous Rhubarb Cake


1 1/2 cups raw Rhubarb cut fine
1  cup brown sugar
1/2 cup white sugar
1 egg
1/2 cup butter or margarine
1 cup applesauce
1/2 tsp. salt
1 tsp. soda
1 tsp. vanilla
2 cups flour


In large mixing bowl cream sugars and butter, add egg and salt. Stir in applesauce, soda, vanilla, and flour. Add rhubarb. Pour in prepared 9x13x2-inch baking pan and sprinkle with 1/4 cup white sugar and 1 tsp. cinnamon. Bake at 375-degrees for 30 to 35 minutes. The cake is very moist and needs no frosting.

for 1 lb. loaf                                    1 1/2 lb loaf

3/4 C.                 chopped rhubarb               1 C.
3/4 C.                      water                    1 C.
1/4 t.               finely shredded orange peel     1/2 t.
1 T.                    butter or margarin           2 T.
1 1/3 C.              whole wheat flour              2 C.
2/3 C.                 bread flour                   1 C.
2 T.                     brown sugar                 3 T.
1/2 t.                      salt                     3/4 t.
1/4 t.                ground cinnamon                1/2 t.
1 t.

Rhubarb is incredibly versatile with many culinary uses. Try it in cakes and desserts, pastries, jams, pickles, conserves, sauces and, of course, wine. There may be several recipes by the same name but they are different (although sometimes only slightly, I have tried to remove the duplicates). There are now over 300 recipes in this collection. Remember, only the stalks are edible, don't eat the leaves or roots.
